Shortcut Minestrone Soup

Makes: 8 servings, 1-1/2 cups each

2 qt. (8 cups) water

2 cans (14-1/2 oz. each) diced tomatoes, undrained

1 pkg. (10 oz.) frozen chopped spinach

1 pkg. (10 oz.) frozen BOCA Meatless Italian Sausage, cut into 1/2-inch-thick slices

2 medium carrots, sliced

1 medium onion, chopped

1 cup bow tie pasta, uncooked


PLACE all ingredients in large Dutch oven or stockpot.

BRING to boil on medium-high heat, stirring occasionally. Reduce heat to medium-low; simmer 15 min. or until carrots are tender, stirring occasionally.

Substitute

Substitute elbow macaroni for the bow tie pasta.

Jazz It Up

Sprinkle with grated Parmesan cheese before serving.
